I'll 2nd Greg's response and encourage you to take a training course for workflow design and implementation. It's a big subject to tackle on your own.We teach 2 workflow courses: a 1-day fundamentals, using the visual workflow design tool "WorkFlowBuilder", which is good for customer admins and business users, or the 2-day, XML and Perl-based workflow developer course, geared torwards consultants.
However, if you've done BPM programming before and/or worked with other workflow engines, and are comfortable with XML, CGI and Perl, you might find the courses too slow for you. In that case, have a look at

We are just wrapping up our QuickStart, and we have identified a few changes we would like to make to the base workflow which was setup for us. Things like: add a notification e-mail when a file is approved, or add a confirmation step before the scripted deployment. What is the best way for me to approach these changes? Can I use workflow builder?

Most people would advise you against using Workflow builder, you can see that if you do a search in this forum.
Some people like the configurable out-of-the-box (OOB) workflows which were added in 5.5.2 SP2 or 3. Folks who have been working with TeamSite for a long time prefer to write their own from scratch.
I would recommend checking out the OOB workflows to start out, and then branch out from there.
