We are thinking about using the boxing feature in Documentum. Has anyone used it? Any pros or cons?
What Documentum document/url are you referring for the term "boxing"?

I was in a meeting with the group doing our Documentum install and it
was mentioned that Documentum has a utility to create a box and place
documents in it. They were unsure off how it worked. I was wondering if
anyone in the group had any experience with it.

Maybe they were talking about the OEM version of Content Server. Basically, ISV can install everything on "box" and incorporate their application on top of Documentum, and sell/distribute the "box" without the customer knowing that Documentum is running under the covers.
If this is what you are referring to, what specific questions do you have?
