Create doc from a template in a workflow..

is this possible easy to do using oob activities?

Basically I want to send a user a task to add content to a document that is created automatically in the workflow and is based on a template in the repository.

Workflow creates the doc and adds as a package which is available in the task.

The document can be created from workflow by using "process data mapping" activity. In the process data mapping activity map constants/ other data to the package attributes that has no object/ document attached to it.

In process with all data mapping, new object is created and attached to package automatically if no object/ document is attached to the package to which the data is being mapped

Prior to the datamapping , I used a DQL read to grab the template I wanted to use and map it to a process package.

I then set the content of the workflow package in Process Mapping as you described.
