keeping users from saving output above htdocs

Newbie so be gentle...

I have seen a way that can stop users from saving their generated output to any directory. Can someone point me to an example? Thanks.

Are you talking about saving generated output from a DCR?
If so - you need to RTFM on the templating.cfg file - in there you will find that there are validation regex directives that can be used to verify that the location chosen for saving the generated output meets certain criteria - if it doesn't, the user will not be allowed to save it there. However - this does not affect the UI in terms of where it starts when prompting the user for a location - it only validates the choice after its been chosen.
