Hello All,
Can I change the metadata of the assets on the fly during the deployment based on some predefined conditions (Using MediaBin Deployment Agent)?

As far as I know, this is not possible.
Deployment Agent does not modify the metadata of the assets it works on.
Obviously, someone from Interwoven may prove me wrong...

Folco is correct. There is a mechanism to insert your own processing step into Deployment Agent. However, it has so far been reserved for use by the Interwoven Customer Services Organization (CSO).
If you provide more details about exactly what you're trying to do, we may be able to determine a solution.

I was worndering if that could be done using OOTB configurations.

It somewhat depends on the details of your use case. DA can specify a task on the retrieval and that task can contain a metadata adder primitive. However, the OOTB configuration does not allow for varying the parameters of a task dynamically. So, for example, you could ensure that everything deployed had a fixed copyright notice affixed. However you could not make the metadata being added specific to the particular asset.
