Is there Java Docs published for using Open Deploy Web Service or are we expected to go through the source code (or wsdl) to understand the available API's?

No it is not there

There is the CSF developer guide included with OpenDeploy or it used to be that generally talks about how to use the api. It may be in a separate download section on the support site now.
Also, in the examples directory of your OD installation (od-home/websvc/1.1/examples) there are many examples for how to use all of the web services functionality.
