We are on VAP 7.4sp2 and planning to upgrade to VAP 8.1. Can we directly upgrade VAP to 8.1 or we have to upgrade to 8.0 first and then to 8.1?

You'll want to review the Installation Guide and Release Notes for the version you are upgrading to. You can upgrade directly from 7.4.x to 8.1. See the "Supported Upgrades" section of the 8.1 Installation Guide for your application server for details.
