In templatedata folder, we have category type, datatypr and in datatype we have datacapture.cfg. Now when I click on new form entry, datacapture.cfg generates new form template.

We have mant other folders at the templatedata level like iw-web. Therr is no datacapture.cfg in this folder. So whats the use of these folders ? Why do we need to create these folders ? May be one folder we can create for preview but why do we need so many ?

That is your docroot. Whoever set up TeamSite put the files there. Get some training. You can also just delete everything and hope you do not break anything.

As nipper has already told you about docroot,every application has its own document hierachy that is being managed by a folder level hierarchy.Having a categoryType and a dataType does not menas that you can place everything in that folder,it depend on the person who has set up TS that how he would like to mange contents,Finally its all about Content Management.

Many of the folders which you are saying are created by some other user of automated process, that could be a workflow. I would suggest just monitor the folders for a few days if you are not sure about their purpose or not able to find whether they are used by any process/workflow before deleting them.

If you look at your iw-home/examples/Templating/templatedata directory, you can see how this is an out of the box configuration for some dcts. It sounds like the user who set up your Teamsite followed a similar approach.
