Number of Text Metadata Set for Quick Search

Any recommendations on the limits for the Number of Text Metadata Set for Quick Search? We currently have 8 set and have been experiencing problems with Full-Text Catalogue about once a month. The whole system locks and we have to reboot the database server as well as the application server.
