There are two GUIs, the one that's integrated within the Admin Console for TeamSite, and the OpenDeploy GUI. DataDeploy management is only available in the latter, as far as I know. The Admin Console is just for looking at logs and firing off deployments.

The OpenDeploy GUI is a separate install. The package is called something like OpenDeployAdmin_###.zip and all the info you need is in the OD install guide.

Yes: DataDeploy can map both DCR fields and Extended Attributes on a DCR to database tables.

You tell me. If your front-end isn't going to need them, then don't bother deploying them. If you need more clarification, you'll have to describe what product(s) and version you're using, and what you're hoping to achieve.
