You can use multiple UID/Passwords, sure.

Basically, you need one per Deployment/Destinations/database of your DD Configuration.
That is to say, if you have multiple Deployments you can use various passwords even within
the same Configuration. You can either code it then and there or reference Entries from
database.xml.
