can someone help me to understand the tecnical steps in deploying a file on to target servers?
such as, creating iwold, iwnew, copying iwnew, rename

Have you read the manuals?
It doesn't sound like it.
You do not create .iwold, .iwnew, etc. files - OpenDeploy does that for you based on the type of deployment being run (transactional vs. non-transactional) -- all you really need to worry about is how to write a deployment configuration file and how to configure base and receiver servers.
Depending on your role in your organization, you may not need to worry about that either.
