I would like to add a button in tinymce where as when the author selects that button it will drop a pre-defined table with multiple classes for table header and rows. In addition it will also have classes defined for the row to be of alternate colors.

We were able to do this in the past with Visualformat but not sure how it can be done in tinymce.

Custom plugin. Don't bother trying to use the "template" functionality; it has been expressly disabled in IWOV's version. If that's what you're looking for, you'll need to popup to your own TinyMCE instance. However, if you're looking to wrap selected text in markup, or insert predefined markup, then custom plugin is your answer.
