When I edit some pages, I get "component browser" option, while in others I dont.
So why is that and how can I add or delete "component browser" option ?

Likely you have a different role than they do, if you look at the actions allowed for the roles, you should see the difference.
its because the component and media browser buttons only appear for fixed layout pages.
