You can do anything with enough time and knowledge.
Can I write a workflow with a delay and kick off a deployment at some psecific time ? Easy.
Can I write a deployment that runs nightly at 1 am that pushes certain content ? Easy
Are those what you are talking about ? I don't know.
Do you have the knowledge to do those ? Again I have no idea.

I am looking the above one, with ability to choose publish time and certain content. I am new to teamsite, I have not much insight into it. I know there are some OD deployment config files, I am trying to play with them but I am not getting how to do scheduling with the deployment scripts. I have no knowledge on how to work with workflow's.
It would be greatly helpful, if you can provide me briefly outline the steps how to make this happen. Some pointers to documentation related to this task could also helpful.
You have [at least] two choices:
Given the brevity of your description it is difficult to determine which of the above would be the better choice to use / start from. If you're talking about something like: "always deploy file1, file2, and file3 at 23:59 every day" - I'd suggest using #1 (read the OpenDeploy manuals for more information on scheduling and the creation of deployment configuration files). If you're talking about something like: "I want to choose N files to deployed either some number of hours from now or on some specific date & time that could change from one invokation to another" - I'd suggest using #2 (again read the OpenDeploy manuals, but also read the Workflow manual(s))
If you're having a difficult time understanding how to implement either - you can always look at bringing in a knowledgeable consultant to help you with the specific process.
