What is the easiest way to determine what service packs I have installed for various TS products (TS,Templating,OpenDeploy,DataDeploy...)

Look on the same directory level as your iw-home or od-home and there should be an IWOV_Upgrades directory. Under that directory is a directory structure for each type of Service pack you have installed (or have installed in the past). This directory structure also holds the delta of the files that were updated when the service pack was installed.
For instance, if my iw-home was:
/usr/iw-home
then the IWOV_Upgrades directory for TeamSite and TeamSite Templating would be:
/usr/IWOV_Upgrades
and under that there would be:
/usr/IWOV_Upgrades/TeamSite
/usr/IWOV_Upgrades/Templating
For TS 5.5.2 there would be a 5.5.2 directory under each of these directories after the service pack was installed and depending on the service pack installed there will be a 1.0 or 2.0 directory under the 5.5.2 directory.
The same pattern exists for OpenDeploy.
If you uninstall the service packs the 1.0/2.0 dir is copied to a directory name with a timestamp tacked on the end (in case there was some problem with the uninstall your delta will be preserved).
Furthermore mose binaries have a build number which can be retrieved by running the binary with a "-v" option. If you know the build numbers from a specific patch or service pack you can use that info to tell if the patch or service pack is installed (if you have a later build number then a patch/service pack has been applied post the build of the binary you are looking for).

Where else could IWOV_Upgrades be if it is not in this directory structure (same level as iw-home)?
We are using TS552 on Solaris.

Well the installer will place it equal to directory level where you installed TeamSite or OpenDeploy (ie, also known as iw-home and od-home). If the directory structure is not there (or has been removed) I don't know of any easy way of telling if the service pack is installed. on windows the service pack shows up in add/remove programs (but that obviously won't help with solaris).
If you give the -v output from iwserver we might be able to tell you at least if you have a service pack installed (and maybe the delta directories were removed for some reason... if you need to uninstall the service packs this could be a problem).

just a note:
I have installed the opendeploy service packs and they are not on the same level as the iw-home directory but in the actual iw-home directory. The sp1 and sp2 for templating and teamsite 5.5.2 are in the same level as iw-home

This is probably because you installed OpenDeploy *within* iw-home.
The service packs for OpenDeploy go into an IWOV_Upgrades directory at the same level as od-home (not iw-home).
