which are the different ways to set metadata to an image file?

Using the OOTB (but not, I believe enabled by default) Set Metadata option.
Using MetaTagger's, Set Metadata option.
Using MetaTagger's automatic processing functionality (if suitably programmed, trained, etc.)
Writing a script that sets programmatically determined EAs on the file using iwextattr or OpenAPI
Writing a script that prompts for metadata, and then uses iwextattr or OpenAPI

There may be one or two more contrived [IMO] methods, but I believe the above is the basic set of ways one would do this.
