We use Documentum 6.5

In "Advanced Search", I would like add or delete options of the Object Type and options of the Properties. I don't want that the user see all the options.

This is well described in the WDK Developers Guide (which can be downloaded from Powerlink) under a section called "Configuring and Customizing Search". Essentially, you'll want to extend the Advanced Search component XML and modify the "includetypes" element to force search only to show the types you're interested in.
