Is there a way to split the load across multiple Index servers in Documentum? If so, can someone tell me which documentation contains instructions for this? Thanks.

Yes, the best way is to go for multi-node set up so that the load will be distributed across the multiple nodes and the explanation on how to install multi-node set up for IndexServer's is given in "Multinode Full-Text Indexing Installation Guide.pdf".
