1. What capability does the Priority Set allow for?
2. What capability does the Due Date entry allow for?

With the out-of-the-box workflows, the Due Date and Priority do not affect the processing of jobs or tasks in any way. They are simply job and task variables that can be used to communicate information among users. In the UI, they can be used in sorting or filtering jobs and tasks so that you can work on the most important things first. You can remove these variables, or you can add others.
There is no limit to what you
could
do with them in automated processes.

Can Due Dates be used in conjunction with Task Expirations? If so, how do we incorprate them? Any task timeouts are set during Job Creations.
Can the Priority values be retrieved in external tasks to be included in email notifictions scripts?

Since the priorities are job and/or task variables - they are easily accessible from within externaltask scripts.
If you are using an externaltask script you can also manipulate the timeout value for tasks (which I assume is what you mean by "task expirations") - however, I haven't tried this out in 6.0 and I don't know if they've resolved any of the issues with setting the timeout value on tasks programmatically (e.g. being able to specify the format in either "mmddyyyyHHMM" or "+HHHHMM" as opposed to only being able to specify it as "+SSSSS..."; and being able to retrieve the current value regardless of which format was used to initially set it).
However, I believe there is a requirement that you cannot set a timeout for a task which was not defined with a timeout - you can only *adjust* a timeout value for a task which had an initial timeout defined.
