I notice the only win offering of the Upgrade Guide and Checklist is for NT. Where is the 2k version? Or are we supposed to just use the NT documentation?

I think the documentation name is wrong. It should be win 2000. TeamSite 6.0 does not support Windows NT.
In this doc you can see this :

A dedicated Windows 2000 server (development TeamSite (TS) server). This server should not
be running any other enterprise applications.

Yes - it excludes OpenDeploy - it generally means things like App servers, heavily used DBs, etc. and also includes PDC/BDC from the old ActiveServer days
