Pattern Extraction

I am trying do set-up some simple pattern extraction. The documentation is very vague. Can someone take a look at the following pattern:

<meta name="dc.subject" value="Some Value" />

What pattern I need to grab the "dc.subject" and "Some Value" pieces from this string.
