Dangers of Building The Web Application?

We are running:
TS: 6.0 on Windows
We are planning on removing and adding "portlets" in the ccstd. There is some hesitation amongst management since we do not have a development environment and changing the UI requires a rebuild of the web application. Beyond what is already mentioned in the Interwoven ® User Interface
Customization Guide, are there any concerns when rebuilding the web application that should be taken into consideration? Is rolling back to the previous state an easy task? I see that there is a way to rebuild the web app completely to its default state, has anyone had issues with this?
If anyone can provide insight into this matter (and possibly set some minds to ease) that would be very helpful.

I can't comment on what you're trying to do the way you're doing it - but I strongly advise you / your organization to look into getting a development environment ...

I really don't think you could consider doing that sort of development in a production environment -- it will result in a great deal of down-time and unpredictability for any users who rely on the system.
It would be best done in a development environment. Furthermore if you have multiple developers it may even be worth considering having multiple development environments if there is going to be a lot of rebuilding of the web application - as this is a rather time consuming exercise - and you generally don't want your developers sitting around waiting for each other's rebuilds.
In either case, if you want to have the ability to roll back your customisations then you should keep all your custom code in an appropriate source control system -- if you are brave you can even attempt to use TeamSite for this, although it probably wouldn't be my first choice
