Specifically for a Physical object. But I would be interested in seeing how to update the document also.

To my knowledge there isn't one just for the specific tab. If you look at the specific tab of a document, you will see 'Max. Versions', 'Version Control' and 'Mime Type'.

Document Management's 'UpdateVersion' allows you to update the mimetype, but not the other parts of the Specific tab for a document.
